It's my favorite time of year! Especially this year … and I'll tell you why.
I took an entire 10 days off between Christmas and New Years this year. Not to go anywhere exciting, but to just stay home and RELAX. I hardly even blogged during that time. I just ate, drank and hung out with family and friends.
And while that was totally amazing of course, what I really love is this first week back. Everyone is well fed, relaxed, and ambitious to have a fresh start to the new year. What's even better is that it's still sweater weather, so you can hide those extra lbs until you work it off by Spring.
And in the meantime, there's this Lightened Up Alfredo Sauce to keep you warm.
How to Make Lightened Up Alfredo Sauce
Lightened Up Alfredo Sauce is made using Laughing Cow cheese wedges, so it's a bit lighter than your typical Alfredo sauce recipe.
What's so great about this recipe is that it comes together super quickly and it's so creamy and delicious.
I love using the Garlic and Herb flavor, but you can also use the Light Swiss flavor.
Adding cottage cheese makes it extra creamy and cheesy. Even if you don't like cottage cheese, you won't taste it in this sauce!
To achieve a smoother consistency, try blending these ingredients in a food processor before heating it up!
I prefer the easier method of making it in a sauce pan – it's so quick and easy.
Then, serve this Lightened Up Alfredo Sauce on your favorite whole wheat or chickpea pasta, add some protein like chicken or shrimp, and ENJOY! I even liked this pasta recipe re-heated for lunch.

This Lightened Up Alfredo Sauce is made using Laughing Cow cheese! It's one of my favorite quick and easy dinner recipes … ever.
Ingredients
- 1 tablespoon butter
- 3 cloves of garlic, minced
- 1 cup of fat free milk
- 6 wedges of Laughing Cow Garlic and Herb Cheese Wedges
- 1/4 cup low-fat cottage cheese
- 1/2 teaspoon onion powder
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon salt
- 1 teaspoon cornstarch
- 1 tablespoon fresh or freeze dried chives
- 6 ounces Banza cavatappi
Instructions
- Over medium heat, melt the butter and saute the garlic one minute, until fragrant. Add in the milk, Laughing Cow cheese, cottage cheese, onion powder, pepper and salt. Stir to combine, breaking up the cheese as it melts.
- Cook the cheese mixture for about 15 minutes or until the cheese is fully melted. Add the cornstarch to the cheese mixture and stir well until it thickens.
- Serve over chickpea pasta (cavatappi is my favorite) and garnish with chives.
Notes
To reach a smoother consistency, blend all ingredients but the chives and cornstarch in a food processor, adding more milk as necessary. Then, heat it a pan for 5 to 10 minutes, add in the cornstarch, and stir until thickened.
